All you need to do is heat oil in a pan, add whole spices along with curry leaves and a host of other aromatic spices followed by baby onions and voila, it’s done! Yes, it’s that simple. Start with dry roasting peanuts until the colour changes. Once done, add in sesame seeds and coconut. Roast for a few minutes. Then, pour this in a blender and make it into a fine powdery paste.

Then, in the same oil, add in all the whole spices, curry leaves and saute for about a minute or two. Once done, add in the peeled baby onions and cook for some time or until the onions turn translucent. Now, add in all spice powders and mix everything so well.

The last step is to add in the ground masala followed by water, tamarind, salt and jaggery or sugar. Bring this to a boil, cover and simmer for about 15- 20 mins or till the oil separates.
